I don’t like coleslaw with too much mayo.
This is warm bacon vinegar heaven.
In a large skillet cook 3 or 4 slices of diced bacon until crisp. Drain on paper towel.
Add 1/3 cup of diced onion to the bacon fat in the skillet
and cook until softened (about 2 minutes).
Pour in 1/4 cup of cider vinegar and 1/4 cup of water into the pan.
Stir and scrape up the browned bits in the pan and bring to a boil.
Add 4 packed cups of shredded cabbage to the pan and salt and pepper.
Cook, stirring until wilted but crunchy about 4 minutes.
Season and Serve.
I love love love Broccoli Salad! This is simple to make. In a large bowl add broccoli florets, chopped onion, sharp cheddar cheese (cut into bite size cubes) and cooked and crumbled bacon. In a separate bowl whisk together 1/2 cup of white vinegar, 1 cup of sugar and 1/2 cup of water. Pour over the broccoli mixture and keep in the fridge overnight. The next day enjoy this delicious salad. Your kids might even start to love broccoli.
Isn’t this a beautiful side dish? It’s perfect for this time of year. You can make this how ever you want. Usually the bottom layer is lettuce (any kind), then add layers of onion, celery, carrots, tomatoes, peas, etc… then add a layer of mayo and shredded cheese. Dig in!
In a medium bowl mix about 1/2 cup of sour cream, 1 tbls apple cider vinegar and 1/2 a packet of Splenda. Mix well. Add two medium cucumbers, sliced thin and combine. This is a delicious refreshing side. I always have cucumbers in the fridge.
Black Bean & Corn Salad is easy, healthy and delicious! You can put it together with fresh, frozen or canned ingredients. Mix corn, canned black beans and fresh avacado (if you like). You can also add some chopped tomatoe. Toss with your favorite salad dressing (homemade or bottled). Some great choices are Italian with Oreganio seasoning or Southwestern dressing with Cilantro. You can use Ranch and salt and pepper if that’s your thing. This is a great side dish that is simple to make and beautiful to eat.
Steak tastes just as good cold as hot…amazing. Leftover steak is perfect for a salad. Make your favorite salad and top with sliced steak, cheese and your favorite dressing. Some great combos are blue cheese with oil and vinegar or shredded sharp cheddar and Ranch dressing. To make it family friendly and lowfat serve the Adults more salad and less steak and the kids less salad and more steak.
Sometimes you just want (need) a light supper. Marinate chicken in a zip-top bag and keep in the freezer. Thaw and grill. Serve with salad.
