Make your spaghetti as usual.
Cut the tops off the peppers and scoop out the inside (any color is fine but the orange ones are perfect).
Cut a jack-o-lantern on one side of each pepper.
Spoon spaghetti into peppers and serve. How fun!
Microwave 2-10 oz packages of frozen peas in 2 tbsp of water in a bowl for 6 minutes. Stir halfway through cooking time.
Stir in 3 tbsp of melted butter, 1 tbsp of lemon juice & 1/3 cup of parmesan cheese.
Microwave for 2 minutes more.
Peel & grate 3 pds of potatoes.
Combine the potatoes & 1 finely minced onion with 3 beaten eggs & 1/2 cup of seasoned dry breadcrumbs.
Drop spoonfuls in a skillet with a little hot oil & brown on both sides.
Stir together soft butter & minced garlic & spread on your favorite bread halves or slices.
Sprinkle with spredded cheese (Parmesan or cheddar, etc…).
Bake or broil until bread is toasty & cheese is bubbly.
Mash ripe avocados with a fork. Keep it lumpy.
Add chopped onions, fresh chopped garlic, chopped tomatoe, cilantro & lemon juice.
Bring 1 cup vinegar, 1/2 cup of sugar, 2 teaspoons of dry mustard & salt & pepper to a boil.
Remove from the heat & add 1 cup of vegetable oil.
Pour over 1 large head of chopped or shredded cabbage , 1 chopped onion & one chopped green or red pepper. Mix.
Cover tightly & refrigerate over night.
Mix together a 16 oz package of frozen broccoli, thawed & drained (or fresh steamed broccoli) with 1-1/2 cups of shredded cheddar cheese & 3 eggs & 1 cup of seasoned Italian bread crumbs in a bowl.
With your hand shape into small patties & lay on a baking sheet coated with cooking spray.
Bake at 375 degrees for 15 minutes, turn & cook for 10 more minutes.
Cook 1 pound of yellow squash (sliced) & 1 medium onion (chopped) in a little salted water. Drain.
Add 10 crushed crackers & 1 cup of grated cheese & 2 beaten eggs & 1 cup of milk &
1/2 cup of melted butter.
Pour into a 1-1/2 inch casserole dish coated with cooking spray.
Sprinkle 5 crushed crackers on top & bake at 400 degrees for one hour.
Mix 1-16 oz can of corn (drained) or frozen corn (thawed) or fresh corn (off the cob) & 1 small chopped onion & 1 medium chopped tomato.
Mix in 1/3 cup of mayo & Season. Cover & refrigerate.
In a bowl mix 2-8 oz packages of softened cream cheese & 1 can of cream of chicken soup. Mix well.
Stir in 2-16 oz packages of frozen, chopped spinach, thawed & well drained.
Spoon into a 3 qt baking dish coated with cooking spray.
Sprinkle 1 cup of crushed round, buttery crackers over the top. Bake at 350 degrees for 35 minutes.
