Greek Feta Chicken

In a bowl mix together 1 cup of plain yogurt

& 2 large garlic cloves, (smashed). Add seasonings (salt, pepper, garlic powder, oregano).

Add 4 boneless, skinless chicken breast halves (you can pound them to thin them out if you want).

Cover and refrigerate at least 30 minutes or until your ready for dinner.

Preheat your oven broiler. Line a baking pan with foil & place chicken on foil.

Broil 6 minutes, turn, brush with marinade & broil 6 more minutes.

Sprinkle feta cheese on top of chicken & broil 5 minutes until topping is crisp & brown.

 

Ice Cream Sandwich Cake

Summer will never be the same.

Lay 12 ice cream sandwiches (whole) in the bottom of a 9 x 13 pan.

Spread 1/2 of a 10oz container of cool whip over them.

Pour 1/2 a jar of carmel (or any flavor) of sundae topping over.

Sprinkle half a bag of your favorite candy (chopped) like Peanut butter cups.

Repeat, Freeze and eat.

 

4-Ingredient Breakfast Pizza

Arrange 2-8oz tubes of refrigerated crescent rolls in a rectangle on a lightly greased baking sheet pinching the seams to seal.

Spread 2 beaten eggs over the crescent rolls.

Sprinkle cooked sausage (or bacon, or ham, etc…)

& 1 cup of shredded cheese (Cheddar is great, but use your favorite).

Bake at 375 degrees for 20 minutes.

 

Hush Puppies

Combine 1 1/2 cups of self-rising white cornmeal mix

& 3/4 cup of self-rising flour

& 1/2 of a medium diced sweet onion

& 1 1/2 tbsp sugar

& 1 large egg, lightly beaten

& 1 1/4 cup of buttermilk.

Let stand of 10 minutes.

Drop batter by rounded tablespoons into hot oil and fry about 3 minutes on each side until golden.

Keep warm in a 195 degree oven until ready to serve.

Old-Fashioned Potato Salad

Place 7 pounds of peeled & cubed potatoes in a pot of water and boil for 25 to 30 minutes.

Drain and put in a large bowl and cool.

In a seperate bowl combine 2 1/2 cups of mayonnaise or mayonnaise-style salad dressing

& 1 tbsp of cider vinegar & 2 tbsp of mustard & 2 tbsp of pickle juice

& 3/4 cup of sugar & 1/3 cup of milk.

Whisk together until smooth.

Add 1 dozen hard-boiled, peeled & sliced eggs to the cooled potatoes

& add 4 stalks of chopped celery & 1 chopped onion.

Pur the dressing mixture over the top & toss gently.

Cover & refridgerate at least 4 hours before serving.

 

French Onion Burger

Saute 2 cups of chopped onion in hot oil about 10 minutes.

Let cool.

In a bowl add the cooled onion, 1 pound ground beef, 1 large egg white, lightly beaten & seasonings.

Shape into 4 equal patties

Cook in pan or grill 5 minutes on each side until done. Top with your favorite cheese.

Serve on a bun with french dressing.

Shrimp Chowder

A Crockpot Caribbean Vibe.

In your slow cooker add 1 medium chopped onion

& 5 medium peeled & cubed potatoes

& 1 1/2 cups of diced cooked ham

& 4 cups of water (whisk 4 tbsp of flour with the water before adding it).

Cover & cook on low for 7 hours.

About 15 minutes before serving, turn the heat to high

& add 2 pounds of shrimp, peeled & deveined

& 1 cup of heavy cream.
