Broccoli Cornbread

What a way to get your veggies!

In a large bowl blend 2 8-1/2 oz pkgs of cornbread mix and

a 16 oz container of creamy cottage cheese.

Add 2 beaten eggs and a chopped onion.

Mix well and add chopped fresh broccoli (or a package of frozen).

Pour into a 13′ x 9″ baking pan.

Bake uncovered at 350 degrees for 35 minutes.

While still warm, sprinkle with Cheddar cheese. Let cool. That’s cool.
