These are PERFECT for Kentucky Derby time!

In a small bowl soak 1 cup of finely chopped pecans in 1/3 cup of bourbon for 30 minutes.

In a large bowl, use a hand mixer to cream together 1/2 stick of (room temp) butter and 1 pound of confectioners sugar (10X)

Add the pecans and bourbon and stir to combine well.

Roll the mixture into small balls and dip the balls in 2 oz of melted bittersweet chocolate.

Cool on wax paper. These will have you singing “My Old Kentucky Home”.
