I used to make this recipe by chopping up everything separate and it took alot of time. Now I throw it all in the blender and I like it better and it takes minutes. This is a delicious refreshing healthy soup. Serve it as cold as possible. In a blender briefly mix 1 -10 1/2 oz can beef broth, 2 1/2 cups V-8 juice, 3 tbsp lemon juice 2 tbsp chopped green onion, 2 chopped garlic cloves (use the kind in the jar), 2 tbsp hot sauce, 1 cup green pepper, 1 cup cucumber, 1 cup tomato and salt and pepper. Don’t over blend. Keep it chunky. You can serve this in individual bowls or in shot glasses placed in a tray of ice. Perfect for entertaining. This soup will help you fit into your bathing suit this summer.
This is one of my very favorite receipes of all time. It comes from my Mother-in-Law and you can use ANYTHING in it. Simply put 1 1/2 cup of milk and 1/4 cup of melted butter, 3 eggs and 1/2 cup of Bisquick and seasoning in a blender. Pour into a pie pan then sprinkle any veggie(spinach, broc, zucchini, etc…) or meat (crumbled bacon, chopped ham, leftover meat, etc…) and top with shreded cheese (your favorite or whatever you have that needs to be eaten). Gently push it down into the egg mixture and Bake at 350 degrees for 45 minutes. Let it sit until firm. This works for Breakfast, Lunch or Dinner. By the way, for kids I call this “Pie”.
These are the most delicious beautiful cookies that are perfect anytime of the year. In a bowl combine 5-1/3 cups of flaked coconut and 1 can (14oz) of sweetened condensed milk and 2 tbls of vanillia extract. Drop 2 inches apart onto a baking sheet sprayed with cooking spray. Bake at 350 degrees for 10-12 minutes or until lightly browned. With a spatula dipped in water, immediately remove to wire racks to cool. This makes about 4 dozen yummy coconut goodness cookies.
Crab is my favorite seafood! It is so easy to purchase fresh in a canister from the seafood dept of the groc store. You can even buy canned and it’s great. Mix a block of room-temp cream cheese in a bowl with about 1/2 cup of mayo. Add a tbl spoon of lemon juice and 1/2 tbl spoon of worcestershire sauce. Season. Fold in crab meat and 1/2 cup of slivered almonds (toasted if you want). The best part about this dip is that it can be served hot or cold. Just add crackers on the side and serve. You will feel like you are by the sea in Charleston.
I always serve Corned Beef and Cabbage on St. Paddys Day. Here’s the secret: Early in the day I put the corned beef, cabage, potatoes and carrots in the crockpot with water and seasoning. Just before serving I glaze the corned beef with honeymustard and bake in the oven at 350 for about 20 minutes. It will be fall-apart delish. Serve the corned beef with the potatoes, cabbage and carrots and some hot mustard or honey mustard on the side and a crunchy whole grain roll. May the luck of the Irish be with you!
I love to prepare food in advance and freeze it. When your ready for a quick and easy dinner just thaw and cook. I used to do this once a month with a company called “Dream Dinners”. One day I realized I could just do it myself. This is a great way to spend time in the kitchen on a cozy day and premake meals to have all month. Go to the Groc store and get what you’ll need. Use good quality zip-top bags and fill with your ingredients. Good ideas: Your favorite uncooked meat in your favorite marinade in a zip-top bag. Do different bags with different meats and marinades.Put rice in another bag and biscuits or rolls in another and keep together, label and freeze. When ready to serve, thaw and grill and serve over the rice. Serve with a fresh veggie and the bread. Another idea is your favorite meat seasoned and placed in a bag. In the other bag put room temp butter mixed with chopped garlic and/or lemon, parsley, etc..(or butter mixed with gorgonzola cheese, butter mixed with crabmeat, etc…).Freeze them in separate bags but put together. When your ready to serve, grill the meat and top with flavored butter and serve with a salad. Casseroles freeze great. Just buy your ingredents and put everything together in advance freeze and enjoy all month. Put together as many as you can in one day. You can spend 2 hours one day and prepare for as many as twelve days…and it’s so much more fun.
These are the perfect side dish with bugers (instead of fries). Simply slice zucchini into thin rounds and put in zip-top bag that has mixed egg white and a little water. Then put the zucchini into another ziptop bag that holds a mixture of panko bread crumbs, seasoning and parm cheese. Press the breading into the zucchini. Place breaded zucchini on a baking pan that has been sprayed with cooking spray. Bake until crispy. I like to start them off at about 350 degrees and when they get crispy turn them down to 200 degrees until the rest of your dinner is ready. You will never crave potatoe chips again.
Everyone loves my Chicken Wings and they are Simple. Purchase chicken wings in the meat dept of the groc store. Spread them on a baking pan and add your favorite seasonings. If your in a hurry bake them high and fast. If not, go for low and slow. You can’t overcook them as they just get keep getting crispy. When your ready to serve take them from the pan to a big bowl and toss with your favorite sauce. This can be Hot Sauce (my favorite is Texas Pete”)or Minced Garlic and Butter or bottled Terryaki Sauce, Barbacue sauce to Honey Mustard. These are so much better for you because they are baked not fried. To make it feel like your at a restaurant serve them with celery sticks and your favorite salad dressing.
I love to use my Slow Cooker! I think there is nothing cosier than a house filled with the smells of delicious food all day or how cool it is to walk in the door and have dinner ready? Just place boneless skinless chicken breasts or thighs in the slow cooker. You can use pork instead. I turn the cooker to high until the chicken has released watery juices (about 30-45 minutes). Then drain out those watery juices and pour your favorite barbacue sauce over th chicken and cook on low until you are ready to eat. You can stir it up every now and then if you want. It easily shreds to serve in buns or over rice. Make it as spicy or sweet as you want.
Black Bean & Corn Salad is easy, healthy and delicious! You can put it together with fresh, frozen or canned ingredients. Mix corn, canned black beans and fresh avacado (if you like). You can also add some chopped tomatoe. Toss with your favorite salad dressing (homemade or bottled). Some great choices are Italian with Oreganio seasoning or Southwestern dressing with Cilantro. You can use Ranch and salt and pepper if that’s your thing. This is a great side dish that is simple to make and beautiful to eat.
