Roasted Chicken with Lemon and Garlic

How Comforting! Rinse and dry chicken. Don’t forget to take out the neck and giblets. Rub with olive oil and seasonings. Peel garlic cloves (as much or as little as you like. I like tons!) and put in the cavity, under the skin and in the pan. Don’t worry they will caramelize. Do the same with lemon. Cover and bake. If you have time to do this early, heat very low until ready. If you don’t have as much time, cook at a higher temp. About 45 minutes before serving, take off the tin foil and the chicken will brown. Let stand a few minutes before slicing. You house will smell amazing!
