I really consider this “Layered Eggs” because that’s exactly what you do. I coat a ramekin with cooking spray and layer with bread (you can skip this). It can be half a biscut, a leftover roll, some torn day old bread, etc.., then add meat such as bacon, sausage, leftover steak or ground beef, then crack an egg. You can break the yolk or not. The next layer is veggies (if you want). I like leftover asparagus or broc or spinach or a slice of tomatoe. Sprinkle some cheese and bake. I put mine in the toaster oven for about 20 minutes and this is fantastic and ranges from about 200-400 calories. Great way to start the day!
